recipe | Spicy Egg Wrap

so, the plate looks slightly weird, but this is what i made for breakfast this morning:
1) spicy egg wrap; my grandfather's recipe for delicious spicy eggs that i wrapped up in a chili paratha
2) bananas and mango
3) muesli

my excuses for not eating breakfast: i don't have time/i'm too lazy. i woke up feeling unusually hungry (i normally can't stomach anything until i've been awake for at least an hour,) and i have got a lot to get done before work so i figured i may as well whip something up to get my day started right. i really enjoyed it and it had actually been one of my new year's resolutions to start eating breakfast more, so i guess i should get back on that. i decided to post a little how-to on the wrap, and then next tuesday i'll do the same sort of post, but for the muesli. i make containers and containers of muesli at the beginning of every week and eat it like crazy. but enough about that, on to the eggs! (also, please bear in mind this is the first time i've shared any sort of recipe of mine, so if the format/instructions are unclear, i apologize in advance!)

this recipe makes two wraps! so you can enjoy both or share it with someone

what you'll need:
  • 3 eggs
  • 3/4 spanish onion
  • 2 green chilies
  • a handful of cillantro
  • 2 grape tomatoes
  • 2 frozen parathas (i used Shana's)
  • 1 1/2 parmesean cheese
  • 1 slice of velveeta packaged cheese

directions: 
cut up the onion, chilies, tomato and cillantro. 
place a bit of butter in a pan and toss in onions. cook until slightly translucent. scramble eggs in a bowl with a dash of milk, add in cut up chilies, cillantro and tomato. pour mixture into frying pan.
i hope you don't need me how to tell you to scramble eggs. once the eggs are almost done cooking, sprinkle parmesean cheese over them and let it melt a little bit.
cook the parathas according to the instructions on the packet, once ready, place on plate and place velveeta slices on top. add the scrambled eggs, wrap it up and voila! egg wrap.
